
Chocolate Cake Mix
Homemade Chocolate Cake Mix was a LOT easier than I anticipated. You can literally make just about anything you want as long as you have simple pantry staples.
I feel like we do not have many traditions within my immediate family, so I really wanted to start making my kids their birthday cakes. Hadley wanted a chocolate cake with white icing (Recipe for that soon)!
I'm not ashamed to admit that I grew up on cakes made from store-bought cake mix, and they were some of the first things I learned how to bake on my own (even though I am more of a cook not a baker). The ease! The speed! The convenience! My Mom is the best cook and baker I know, and She used both box cake mix and I have seen her do plenty from scratch.
Reasons to Make Homemade Cake Mix- instead of box
Even though it's a little more work and takes a little more time, I discovered that I loved the taste of the cake more than than the cakes made out of the box. I have also been on my "Do it myself" era! But to make from-scratch cooking as easy as possible, I've been stocking my pantry lots of pantry staples like All purpose flour, Sugar, Brown Sugar, Cornmeal, and Cocoa.
This Homemade Chocolate Cake Mix is simply my newest addition to the arsenal of things I learned to do this year.
You can even just store the mixed dry ingredients to have on hand for anytime you want to make a cake.
Just when I thought I couldn’t love staying home more... Cake Mix Recipe
- 2 cups sugar
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
I also recently got these super cute air tight jars!
To make the cake:
- 2 eggs, at room temperature
- 1 cup milk, at room temperature
- ½ cup light vegetable oil, such as sunflower or safflower
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
Directions for baking the cake:

In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt until very well combined. (If you are wanting to mix this up for later, just store this mixture in an air tight bag)

Adjust oven rack to the center position and preheat oven to 350°F. Grease and flour a (9- by 13-inch) rectangular baking pan, OR two (9-inch) round baking pans, OR line 24 muffins cups with paper baking liners.

Pour the Chocolate cake mix into a bowl in a large bowl. Blend in the eggs, milk, oil, and vanilla using an electric mixer (This one is great if you need one and are on a budget!) . Beat on medium speed for 2 minutes, scraping the bowl as needed. Gradually stir in the boiling water (¼ cup at a time) until the batter is well-combined (it will be thin and runny).

Pour the batter into the prepared pans, dividing evenly. Bake until a wooden toothpick inserted in the center comes out clean, using these times as a guideline: one (9- by 13-inch) rectangular baking pan = 35 to 40 minutes; two (9-inch) round baking pans = 30 to 35 minutes; 24 cupcakes = 20 to 22 minutes.

Cool cake(s) in pans for 10 minutes (only 5 minutes for cupcakes) before turning out onto a wire rack. Allow to cool completely before frosting.
I THOUGHT i burnt these but it was actually wonderful.
