Easy Chicken and Rice--Perfect for a crowd!
Hey Ladies! Emily Here! It is Monday-- That means I am cooking! Tonight, I am making a spin off of something my mom and aunt Jenifer used to make for me. Cheesy Chicken and Rice--- in ONE POT.
One of my favorite chicken and rice recipes is this Easy Chicken and Rice. Admittedly, I am a rice addict. I love it with just about any dish, but especially with chicken. This puts all of those into one pot, and quickly!
The Recipe:

1 pound boneless skinless chicken breasts, cut into bite-size pieces

1 can (14-1/2 oz.) chicken broth

2 cups instant white rice, uncooked

1 can of cream of chicken soup

1 VELVEETA Mini Blocks (4 oz. each), cut into 1/2-inch cubes

1 pkg. (10 oz.) frozen chopped broccoli, thawed
Directions:
Now, I am sure this can be done in an instant pot-- Maybe even a crock pot. I prefer to do it over the stove in a large pan!

Cook and stir chicken in large nonstick skillet on medium heat 8 to 10 min. or until done.

Step 2
Stir in broth. Bring to boil.

Step 3
Add rice, VELVEETA, chicken soup, and broccoli; cover. Remove from heat. Let stand 10 min. Stir until VELVEETA is completely melted and mixture is well blended.
ONE OF MY ABSOLUTE favorite meals from when I was a kid! Growing up, I loved my Mom’s chicken and rice. She would cook it in the stove top as well, so it was always warm and ready when dinner time came around. It was always such a comforting meal. When I starting cooking for myself, I knew I had to replicate this dish because it reminded me so much of home.
