EASY CHICKEN ENCHILADAS!
Hey Ladies-- Busy week this week at the store so I have to make things easy! My sister made chicken enchiladas and it reminded me that I hadn't made mine in a long time!
1 pound of shredded chicken breast
1 small can of enchilada sauce (14 oz I believe?)
1 taco seasoning packet
1 can of refried beans
shredded monetary jack, or whatever you have in the house
taco sized tortillas
First, Preheat your oven to 350! Also, be sure to spray your 9x13 baking dish with nonstick spray.
Mix the taco seasoning, the shredded chicken, and half a can of enchilada sauce to make the meat mixture!
Assemble the enchiladas by filling each tortilla evenly with the shredded chicken mixture, a spoonful of refried beans, and a generous pinch of shredded cheese. Roll them tightly to close and place in a large baking dish seam side down.
Pour the remaining enchilada sauce over the tortillas and then top them with the remaining cheese.
Bake for 20 minutes, until cheese is melted and bubbly. Serve.
This stuff is always a HIT in my house!
