Oven-Baked BBQ Pineapple Sausage Meatballs

I totally spaced on the fact that I had sausage meatballs in the fridge, and they were about to pull a Houdini and expire today! So, I went full-on 'panic mode' and dusted off a recipe I haven't made in forever (It pains me to have to throw food out!) —thankfully, the rest of the ingredients are basically my pantry’s best friends: BBQ sauce, canned pineapples, and the holy duo of salt and pepper! And of course, the Dutch Oven made its grand entrance—it's basically the unsung hero of all weeknight meals around here!

Oven-Baked BBQ Pineapple Sausage Meatballs

Ingredients:

  • Sausage meatballs (16-24 depending on size- I got the Kroger 12 packs)
  • 1 ½ cups barbecue sauce (any kind will do! I am quite partial to Kinders or Montgomery Inn)
  • 1 cup pineapple chunks (fresh or canned, with juice) (or just throw that whole 20 oz can in-- I did haha. 
  • olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 350°F (175°C).
  2. Sear the sausage meatballs:

    • Heat the olive oil in a large skillet over medium-high heat.
    • Brown the sausage meatballs on all sides in the dutch oven (you don’t need to cook them through, just give them a nice sear). This should take about 5-7 minutes. Add the salt and pepper to your liking.
  3. Add the Sauce:

    • In your Dutch oven, add the pineapple chunks (with juice if canned) and barbecue sauce. Stir them together to combine with the meatballs, creating a sweet and tangy sauce.
  4. Add seasoning:

    • Add salt, pepper, and a little apple cider vinegar or lemon juice to balance the sweetness. Taste and adjust as needed.
  5. Cover and bake:
    • Cover the Dutch oven with its lid  and place it in the preheated oven.
    • Bake for 25-30 minutes or until the meatballs are fully cooked (internal temperature should be 160°F) and the sauce has thickened.
  6. Optional finishing step:

    • If you want a slightly caramelized top, you can uncover the Dutch oven for the last 5-10 minutes of baking to allow the sauce to reduce and get a little more concentrated.
  7. Serve:

    • Once the meatballs are cooked and the sauce is thick and flavorful, remove from the oven.
    • Let it rest for a few minutes before serving. 

This oven-baked version of the dish will give you juicy sausage meatballs coated in a rich, sweet BBQ pineapple sauce. You can serve this dish with a side like roasted vegetables, a simple salad, or even mashed potatoes- Or if you are like us-- With steamed rice! Fun fact, You can make a BUNCH of long grain white rice in a rice steamer (I suggest this one) and just heat it up when you need it in the week!
