
Sausage and Potato Soup!
Had the best day on the farm today! A friendly llama named Lucy wandered over to say hello, and it totally made my day. February is still prime soup season in my book! I came across a delicious-looking photo of what seemed to be potato soup with some kind of sausage, so I got to work experimenting—and let me tell you, it turned out amazing! So without further ado, I present to you..
Sausage and Potato Soup
Ingredients:
- 60 oz chicken broth
- 5 cups water
- 12 redskin potatoes (about 9 cups, chopped)
- 1 small onion, chopped
- 1 (10.5 oz) can cream of chicken soup
- 1 smoked rope sausage, sliced into small quarters
- 1 tsp red pepper flakes
- 1 tsp basil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 chicken bouillon cube
- Salt & pepper to taste
Instructions:
- In a large pot ( Click here to check out Carote Detachable handle set) or a Dutch oven (I use mine 3x a week atleast, Here is a link to mine, combine potatoes, seasonings, sausage, chicken broth, and water.
- Bring to a boil and cook for about 5 minutes.
- Stir in the cream of chicken soup, then reduce heat and let it simmer for about 20 minutes or until the potatoes are tender.
- Serve and enjoy—this one’s definitely a keeper!
