February is still prime soup season in my book! I came across a delicious-looking photo of what seemed to be potato soup with some kind of sausage, so I got to work experimenting—and let me tell you, it turned out amazing! So without further ado, I present to you..

Sausage and Potato Soup

Ingredients:

• 60 oz chicken broth
• 5 cups water
• 12 redskin potatoes (about 9 cups, chopped)
• 1 small onion, chopped
• 1 (10.5 oz) can cream of chicken soup
• 1 smoked rope sausage, sliced into small quarters
• 1 tsp red pepper flakes
• 1 tsp basil
• 1 tsp paprika
• 1 tsp garlic powder
• 1 chicken bouillon cube
• Salt & pepper to taste

Instructions:

1. In a large pot ( Click here to check out Carote Detachable handle set)  or  a Dutch oven (I use mine 3x a week atleast, Here is a link to mine, combine potatoes, seasonings, sausage, chicken broth, and water.
2. Bring to a boil and cook for about 5 minutes.
3. Stir in the cream of chicken soup, then reduce heat and let it simmer for about 20 minutes or until the potatoes are tender.
4. Serve and enjoy—this one’s definitely a keeper!
